Cream Cheese Frosting
Preheat oven to 350 F. Grease a 9 x13 baking pan. Whisk together dry ingredients, set aside. Mix together wet ingredients and gently fold in dry ingredients. Don’t over mix. Gently fold in grated carrots, crushed pineapple and pecan pieces. Pour into baking pan and bake for 30 min or until toothpick comes out clean.
Mix the cream cheese and powder sugar in a standing mixer. Refrigerate it for 1 hour before assembling.
